Monday Morning Breakfast delicious on a Saturday, too! I made as directed and added it to whole grain wheat toast with a little Veganaise Mayo substitute. It was a delicious fulfilling meal and a healthy one, too. I will definitely make this again.
Ingredients
4 hard-cooked eggs, chopped
1 medium fresh tomato, chopped
3 slices turkey bacon, cooked and crumbled
salt and pepper to taste
Preparation
In a bowl, stir together eggs, tomato, and bacon. Season with salt and pepper.
