In a large mixing bowl, combine crushed cookies and cream cheese to form a stiff dough.
Roll into balls and dip with a fork in melted candy coating. Let rest on waxed paper until set.

Coconut Cream Cake I Since the cake mix and the coconut cream already had plenty of sugar, I omitted the sweetened condensed milk. The cake is perfect for me.

1 (18.25 ounce) package white cake mix
3 eggs
1/3 cup vegetable oil
1 cup water
1/2 teaspoon coconut extract
1 (14 ounce) can coconut cream
1 (14 ounce) can sweetened condensed milk
1 cup heavy whipping cream
1 tablespoon white sugar
1 cup flaked coconut
Preparation of Coconut Cream Cake I
Preheat oven to 350 degrees F (175 degrees C).
Grease and flour a 9x13 inch pan.
In a large bowl, mix together cake mix, eggs, oil, water and coconut flavoring.
Beat for 2 minutes and pour into 9x13 inch pan. Bake for 30 minutes, or until a toothpick inserted into the cake comes out clean.
In a medium bowl, combine coconut cream with sweetened condensed milk and stir until smooth. When cake comes out of the oven, poke holes into it in even rows using a large fork or chopsticks.
Pour milk mixture over, allowing it to soak into the cake. Refrigerate for several hours or overnight.
In a large bowl, whisk cream until soft peaks form. Add sugar and continue whipping until stiff. Spread over cooled cake. Sprinkle top with flaked coconut.

Chocolate Ganache is very rich and intensely chocolate. I used Perugina Italian bittersweet chocolate and didn't use the optional rum. This was the perfect glaze for my Snickers Chocolate Peanut Butter Cake.
Ingredients of Chocolate Ganache
9 ounces bittersweet chocolate, chopped
1 cup heavy cream
1 tablespoon dark rum (optional)
Preparation of Chocolate Ganache
Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat.
Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot.
When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the rum if desired.
Allow the ganache to cool slightly before pouring over a cake.
Start at the center of the cake and work outward.
For a fluffy frosting or chocolate filling, allow it to cool until thick, then whip with a whisk until light and fluffy.

Chocolate Cobbler cobbler is rich and the right amount of rich. The sauce is a perfect smooth chocolate and is complemented by the cakey topping, which by itself is a treat. Chocolate cobbler is perfect for a chocolate fix.

1 cup self-rising flour
3/4 cup white sugar
1 1/2 tablespoons unsweetened cocoa powder
1/2 cup milk

Preheat the oven to 350 degrees F (175 degrees C).
Melt butter in an 8x8 inch baking dish while the oven preheats.
In a medium bowl, stir together the flour, 3/4 cup sugar, and 1 1/2 tablespoons cocoa.
Stir in milk and vanilla until smooth. Spoon this batter over the melted butter in the baking dish.
Stir together the remaining cup of sugar and 1/4 cup cocoa powder. Sprinkle over the batter. Slowly pour boiling water over the top of the mixture.
Bake for 30 minutes in the preheated oven, until set. Serve slightly warm with ice cream.

Chocolate Chip Cookie Ice Cream Cake I used Hershey chocolate syrup and I soften all the ice cream and spread it out smooth. When serving. I drizzled more chocolate sauce over the top of each slice.

1 (18 ounce) package small chocolate chip cookies
1/4 cup margarine, melted
1 cup hot fudge topping
2 quarts vanilla ice cream
1 cup whipped cream
12 cherries
Preparation of Chocolate Chip Cookie Ice Cream Cake
Crush half the cookies (about 20) to make crumbs.
Combine crumbs with melted margarine and press into the bottom of a 9-inch springform pan or pie plate.
Stand remaining cookies around edge of pan. Spread 3/4 cup fudge topping over crust. Freeze 15 minutes.
Meanwhile, soften 1 quart of ice cream in microwave or on countertop.
After crust has chilled, spread softened ice cream over fudge layer. Freeze 30 minutes.
Scoop remaining quart of ice cream into balls and arrange over spread ice cream layer.
Freeze until firm, 4 hours or overnight. To serve, garnish with remainder of fudge topping, whipped cream and cherries.

1 cup shredded Cheddar cheese

Preheat oven to 450 degrees F (230 degrees C).
In a large bowl, sift together flour, salt and baking powder. Cut in butter until mixture resembles coarse crumbs.
Make a well in the center of flour mixture. Add the milk and cheddar cheese; stir to combine. Drop batter by spoonfuls onto an ungreased baking sheet.
Bake in preheated oven for 12 to 15 minutes, until lightly browned. While biscuits are baking mix melted butter and minced garlic.

1 recipe pastry for a 9 inch double crust deep dish pie
1/2 cup packed brown sugar
1/4 cup butter, melted
1/3 cup all-purpose flour
5 cups thinly sliced apples
2/3 cup white sugar
3 tablespoons all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon lemon juice
20 caramels, halved
2 tablespoons milk
Preparation of Caramel Apple Pie II
Preheat oven to 375 degrees F (190 degrees C).
To Make Taffy: In a small bowl combine brown sugar, melted butter or margarine, and 1/3 cup flour. Mix well and set aside.
To Make Apple Filling: Place apples in a large bowl. Add white sugar, 3 tablespoons flour, cinnamon, and lemon juice.
Toss until all ingredients are mixed well and apples are thoroughly coated.
Spoon half of apple filling into pastry-lined deep-dish pan. Top with half of caramels and half of taffy mixture.
Repeat process with remaining apple filling, caramels and taffy mixture.
Place top pastry over filling and seal well (this is very important--if edges are not sealed, caramel will leak out all over).
Cut steam vents and brush top crust with milk or light cream.
Cover pie with foil and place on a baking sheet. Bake in preheated oven for 25 minutes.
Remove foil from pie and bake for another 20 to 25 minutes, until crust is golden. Serve warm.

Stir together flour, 1 1/3 cups oats, salt, and baking soda.
In a large bowl, cream 1/2 cup butter or margarine with 2/3 cup brown sugar.

Turn the batter into a greased and floured 8 inch square pan.

Preheat the oven to 425 degrees F (220 degrees C).
In a large bowl, mix together the pumpkin, sweetened condensed milk, and egg yolks.
Stir in 1 teaspoon cinnamon, ginger, nutmeg, and salt. In a large glass or metal bowl,
whip egg whites until soft peaks form. Gently fold into pumpkin mixture. Pour filling into pie shell.

3 tablespoons finely chopped onion
1 (15.5 ounce) can black beans, drained and rinsed
1 (10 ounce) can whole kernel corn, drained

1/4 teaspoon red pepper flakes
2 tablespoons butter, divided
8 (8 inch) flour tortillas
1 1/2 cups shredded Monterey Jack cheese, divided

Best Ever Popcorn Balls is the first time I made popcorn balls and it took me a little while to realize that you have to press realy hard on the balls to make them stick together.

3/4 cup light corn syrup
1/4 cup margarine
2 teaspoons cold water
2 5/8 cups confectioners' sugar
1 cup marshmallows
5 quarts plain popped popcorn

In a saucepan over medium heat, combine the corn syrup, margarine, cold water, confectioners' sugar and marshmallows.
Heat and stir until the mixture comes to a boil.
Carefully combine the hot mixture with the popcorn, coating each kernel.
Grease hands with vegetable shortening and quickly shape the coated popcorn into balls before it cools.
Wrap with cellophane or plastic wrap and store at room temperature.

Dust with confectioners' sugar just before serving.

1/2 teaspoon salt
1/4 cup milk
2 1/2 cups fresh blueberries

In a large bowl, cream butter and 1 1/4 cup sugar until light and fluffy. Add eggs one at a time and mix in.
Mix flour, baking powder and salt. Add flour mixture, alternating with milk. Mash 1/2 cup berries and stir into batter. Fold in remaining berries.
Fill muffin cups and sprinkle with the remaining 1/4 cup of sugar.
Bake at 375 degrees F (190 degrees C) for 30 minutes. Remove from oven and wait 20 minutes to remove from pans.
